Vegan Banana Muffins Recipe
Fluffy and light to slow down
Ingredients
Wet Ingredients
- 1 mashed banana
- 2 tbsp stevia drops
- 2 tbsp coconut oil
- 2/3 cup almond or oat milk
Dry Ingredients
- 80 grams white whole wheat flour
- 1 tbsp baking powder
- 2 scoops vanilla protein
- Handful pecans to add on top
Instructions
- Mix dry ingredients in a bowl and set aside
- Mix wet ingredients in a bowl until well combined
- Slowly add dry ingredients and mix until the batter has a uniform consistency
- Add dried pecans on top
- Bake them at 350°F or 180°C for 45 minutes or until a toothpick comes out clean once you insert it in one of them
- You should end it with 5 – 6 muffins for the rest of the week
