Vegan Banana Muffins Recipe

Wet Ingredients

  • 1 mashed banana
  • 2 tbsp stevia drops
  • 2 tbsp coconut oil
  • 2/3 cup almond or oat milk

Dry Ingredients

  • 80 grams white whole wheat flour
  • 1 tbsp baking powder
  • 2 scoops vanilla protein
  • Handful pecans to add on top


  • Mix dry ingredients in a bowl and set aside
  • Mix wet ingredients in a bowl until well combined
  • Slowly add dry ingredients and mix until the batter has a uniform consistency
  • Add dried pecans on top
  • Bake them at 350°F or 180°C for 45 minutes or until a toothpick comes out clean once you insert it in one of them
  • You should end it with 5 – 6 muffins for the rest of the week
