2flax eggs (2 table spoons flax seed powder mixed with 4 table spoons of water)
30gramspistachio or cashew butter
Instructions
Mix all the wet ingredients in a bowl
In another bowl combine all the dry and give it a mix
Combine the two and knead your dough to form a long log. Slice them into 1 inch thick cookies
Press them flat, and sprinkle them with sea salt (optional)
Bake for 10 -12 mins on 170c, rotating the tray once at the halfway mark
Let cool completely before indulging in these high fat, low card Vegan & Keto cookies

Switch out the pistachio for hazelnut, replace all the lemon zest with Orange zest, and add a few chunks of sugar free chocolate and you’ve got yourself orange chocolate & hazelnut keto cookie!
